Oatmeal Cinnamon Walnut Espreado Cookies

Ingredients

  • 1 cup of gluten-free quick oats

  • ¾ teaspoon of baking powder

  • 1 ½ teaspoon cinnamon

  • ½ teaspoon of salt

  • 1 teaspoon of vanilla

  • 1 teaspoon of unsweetened coconut shavings

  • 1 egg

  • ½ cup of honey

  • ⅓ cup of crushed walnuts

  • 1 jar of Espreado

Directions

  • Preheat oven to 325F

  • Combine dry ingredients in 1 large bowl

  • Melt jar of Espreado in the microwave for 30 seconds

  • In another bowl combine egg, honey, vanilla, Espreado, coconut - mix well

  • Combine wet and dry ingredients

  • Add walnuts

  • Freeze dough for 15 minutes

  • Cook cookies for 12 minutes
